Kitchen Tips #2

  • If recipe calls for 1 cup homogenized milk substitute with 1 cup skim milk plus 2 tablespoon butter
  • If recipe calls for 1 cup sour cream substitute with 1 cup plain yogurt; 1 tablespoon lemon juice plus enough evaporated milk to make 1 cup; or 1 cup low-fat cottage cheese plus 2 tablespoon skim milk and 1 tablespoon lemon juice
  • If recipe calls for 1 cup ricotta cheese substitute with 1cottage cheese plus 1 tablespoon skim milk
  • If recipe calls for 1 cup yogurt substitute with 1 cup buttermilk
  • If recipe calls for 1 cup light cream substitute with 7/8 cup milk plus 3 tablespoon butter.
